Pressure Canning

Low-acid vegetables need to reach a higher temperature during the preservation process to ensure that they are safe to store on the shelf. Learn more about pressure canning, how to do it safely, why we do it, and what produce requires pressure canning in our pressure canning class.
Not only will you learn these skills, but you will put them to the test when we prepare and pressure-can our own vegetables.
Dehydration

Another great way to make produce shelf-stable is to dehydrate it! Learn how to prep items, use a dehydrator, and experiment with other ways to dehydrate products for those who may not have a dehydrator.
You’ll practice your techniques by preparing several different items to be dehydrated.

Checks and cash payments can be received at the Currituck Extension Office located at 120 Community Way, Barco, North Carolina 27917, within 5 days of registration.
